Brownies of my dreams.
My favourite recipe for chocolate brownies comes from The Hummingbird Bakery cookbook. They would always come out absolutely perfect. Then I decided to adapt the recipe slightly to make them vegan friendly for Thomas, so out with the eggs and in with the soya yogurt. This batch were the best yet. They were so moist, rich and unbelievably amazing...
200g dark chocolate, roughly chopped (I used Divine)
175g soya margarine spread (I used Pure spread)
325g caster sugar
130g plain flour
3/4 cup soya yogurt (I used vanilla Alpro)
1. Preheat the oven to 170c, Gas Mark 3. Place the chocolate and margarine in a heatproof bowl over a pan of simmering water. Stir occassionally until thoroughly melted.
2. Remove from the heat. Pour into a larger bowl with the sugar in, and beat together. Add the sifted flour and stir together. Finally, add soya yogurt and mix until thick and smooth.
3. Pour into a greased and lined baking tray and bake for 30 minutes.
