Cherry and marzipan loaf.



175g butter (at room temperature)
175g caster Sugar
3 eggs
175g self raising flour
85g ground almonds
175g glacé cherries
75g (chilled) marzipan grated (I used about 150g just because I love it).

1. Preheat oven to 180°C and line a loaf tin with baking parchment.
2. Mix the butter and sugar until light and creamy.
3. Add the eggs one at a time and then the flour and almonds and then stir in the cherries (wash first and then dry to make sure they don't sink to the bottom of tin).
4. Put half the mix in the loaf tin and then sprinkle the marzipan on and top with the other half of the mix.
5. Bake for 45 mins then put foil on top and finish off for another 25 mins.

I love cherries and I absolutely adore marzipan so this is possibly my perfect cake. I was excited to also bake one without eggs for Thomas so I set to it this weekend and replaced them with vanilla soya yogurt (1/4 cup yogurt = 1 egg) and it also came out delicious. It was a little more moist than the one with eggs but oh so great. I am trying hard to find a reason to bake another one this week. (The photo is of the one with eggs in).

  7. Oh wow, never seen marzipan actually inside a cake before... I love marzipan (and cherries aren't so bad either) so def giving this a try :)
