Coconut and jam cookies.


I got a wonderful book called 1001 cupcakes, cookies & other tempting treats for Christmas and I'm slowly making my way through it. Everything so far has been amazing. These are loaded with butter and taste just like short bread. So darn good!

225g butter, softened
140g caster sugar
1 egg yolk, lightly beaten
280g plain flour
pinch of salt
100g desiccated coconut
4 tbsp strawberry jam

1. Preheat oven to 190c/gas mark 5. Beat together butter and sugar, then add egg yolk. Sift together flour and salt, then stir in coconut.
2. Scoop up tablespoons of mixture and roll into balls. Make a hollow in the centre (using handle of wooden spoon) and fill with strawberry jam.
3. Bake for 12-15 minutes or until golden brown.

  1. Oh my gosh this will make my BF putty in my hands. He loves coconut and always complains that I don't put enough sugar in my baking.

  4. i've made some like this before, but without the coconut. they are soooo good!! a very underated cookie i think.
